I know. It’s very un-mom of me, but it’s true. I sometimes enjoy looking at cookbooks, but as soon as I see the list of ingredients, I’m overwhelmed, and barely know where to start. My favorite cookbook is maybe that 5 ingredient cookbook where the first ingredient is always cream of chicken. I can handle that (most of the time). Ironically, I love kitchen gadgets, cookware, and serving pieces. For me, it must be about the accessories.
But, I know how important the family meal is to the general well being of the little children, medium childrean, and teenage-types. So, I do try to assemble yummy food for our little family unit. I try to make sure we sit down as a family for regular mealtimes, and share roses, buds, and thorns in that process. I just wish the cooking part was more fun.
So, I’m instituting Recipe Thursday on this here blog. Every Thursday, I’ll post a superfun, super-yummy, or super-easy recipe for us all to try and enjoy. I’ll do some investigating, and see what I can find, but it would be fantabulous if I could post some tried and true recipes as well. If you have something we need, just post your recipe in any comments section of any post, and I’ll add it to our running list. In the meantime, I’ll tag all recipes to make an easy access online cookbook for us.
So, here’s the first recipe: (I made this candy for the first time last year, and not only was it easy, but it was YUM-O! It makes a TON, perfect for giving away to friends and neighbors to spread a little holiday cheer.)
Crock Pot Candy
16 oz. jar dry roasted peanuts, unsalted
16 oz. jar dry roasted peanuts, salted
12 oz. package semi-sweet chocolate chips
4 oz. bar German Chocolate, broken into small pieces
3 lbs. (or 2 pkg.) white almond bark, broken into small pieces
Put ingredients into a 4-5 quart crock pot in order listed. Cover and cook 3 hours on low. Do not remove lid!! Turn off and cool slightly. Mix thoroughly and drop by teaspoons onto waxed paper. Let cool thoroughly. Yeild: 150 pieces
