1 cup southwestern egg substitute
1/2 cup fat free evaporated milk
1 cup shredded 2% cheese
1/2 tsp salt
1/4 tsp pepper
1 deep dish frozen pie shell
Combine egg substitute, milk, cheese, salt, and pepper, and pour into pie crust. Bake 25-30 minutes or until eggs become firm.
Serve with fiesta corn and cubed cantalope.

I would have to agree! Everything I have made so far has been a hit..and super easy to boot. Tonight we had Greek Steak Salad…seriously delish!
