Well, if you missed the Messenger’s second annual bake sale benefiting the United Way of Wise County, you missed out.
In the holiday spirit, I’m sharing our family’s Simple Pecan Pie recipe. It was taken from the Cowpasture Cooking cookbook and originally published by the First State Bank of Rio Vista in 1976. The recipe is courtesy of Ms. Janis C. Cox of Fort Worth.
Simple Pecan Pie
1 teaspoon vanilla
3 Tablespoons butter
1/2 cup sugar
1 cup white Karo Syrup
1/2 cup pecans
Beat eggs; add sugar to dissolve. Add remaining ingredients. Cook at 400 degrees for 15 minutes. Lower temperature to 325 degrees and cook for additional 30 minutes.
