The following Beef Pinwheel recipe was prepared by Lauryn Luttrull, a 10-year-old Decatur 4-Her, for this fall’s District 4-H Food Show.
In preparation for competition Lauryn learned about healthy snack choices. Her efforts earned her first-place honors in the Junior Nutritious Snacks category.
A healthy diet and lifestyle are some of the best weapons for fighting heart disease. A heart-healthy diet with moderate amounts of lean protein such as beef can provide your body with the nutrients it needs for optimal health. This recipe is also a great selection for a healthy food choice because of the whole-wheat tortillas, spinach leaves and roasted red peppers.
The health benefits of these ingredients are numerous, beginning with fiber, Vitamins A and C and calcium.
I encourage you to try this quick and easy recipe.
Beef Pinwheels
- 12 oz. thinly sliced deli roast beef
- 1 pkg. low-fat (4 oz.) herb flavored cream cheese
- 4 large whole-wheat tortillas
- 2 cups spinach leaves (about 20 leaves)
- 1 jar (7 oz.) roasted red peppers rinsed and drained
Spread cheese evenly over one side of each tortilla. Place deli beef over cheese, leaving 1/2 inch border around edges. Arrange peppers down center, over spinach. Roll up tightly and wrap in plastic wrap. Refrigerate at least 30 minutes or up to 6 hours before serving. To serve, cut each roll crosswise into 8 slices. Arrange cut side up on serving platter.
